Pico de Gallo & Guacamole infused with cannabis

Summer is just around the corner and the beach days and visits to the lake have already begun! The time for the cozy warmth of hearty curries and soups is over and the time for bright, fresh and refreshing aromas is getting closer and closer. As for cooking in the heat, it’s hard to beat the variety of Mexican offerings. As for Mexican cuisine, pico de gallo and guacamole are two must-have toppings. Spread them on your taco shells, wrap them in burritos to take away, or wrap them with a bunch of tortilla chips and you have a stress-free cannabis-infused beach day. Pico de Gallo

  • 4 tomatoes
  • 1/2 red onion
  • 2 cloves of garlic
  • 2 tablespoons of coriander
  • 1/4 jalapeno
  • Lime juice to taste
  • 3-5 ml cannabis oil
  • Finish with olive oil

To start this cannabis-infused pico, start by dicing your tomatoes and placing them in a large mixing bowl. Next, chop the red onion to the desired size, chop the garlic and add both to the bowl. Bundle the fresh coriander into a firm ball and cut into thin strands. Add coriander and finely chopped jalapeno to the bowl. You can leave out the jalapeno, but it gives the pico a subtle kick. Finally, add cannabis oil of the strength you want and finish off the mixing bowl by pouring in lime, salt, and pepper to taste. When the pico needs a little more oil to come together, slowly drizzle in olive oil and mix gently.

guacamole

  • 4 ripe avocados
  • 1/2 cup pico de gallo
  • Salt and pepper to taste

If you made the pico before starting the guac, you have a super easy recipe. Core the avocados and place the pulp in a small mixing bowl. Then add 1/2 cup of your previously made pico to the bowl and mix until smoothly incorporated. If the pico is already infused, a small amount of THC will be carried over into your guac. If you’ve skipped the cannabis oil step for the pico or prefer something a little stronger, feel free to add more cannabis oil – blend in gently.
